One of the best ways you can care for yourself is by eating delicious foods. Many people also find that the experience of cooking themselves healthy food is an enjoyable act of self-care (I know that I do!).
Unfortunately, sometimes it can be super challenging to cook for just two people when you have an empty nest. Being that I myself grew up in a large family, and I also have a lot of children who have since moved out of my home, I find it at times difficult to create a meal for two without a ton of leftovers. So, one thing I like to cook for dinner that is fresh and healthy and doesn’t have leftovers is The Big Salad. The best part of this recipe is that you can double it if you still have kids at home, or if you’re looking to feed some friends or relatives on the fly!
1 Head of Iceberg lettuce (upgrade to spinach or kale for healthier option)
3 boiled eggs, chopped
Extra sharp cheddar cheese, diced
Boneless, skinless chicken tenders
1 cup chicken broth
1 large avocado, sliced
1 tomato, chopped
1 onion, chopped
1-2 tablespoons olive oil
Shaved almonds (to taste)
Cranberries dried (to taste)
Dressing (to taste)
1. In a pan, add olive oil, onion and chicken tenders, and cook for 15 minutes. Add 1 cup of chicken broth and cover.
2. While your chicken finishes cooking, wash your lettuce and cut it into pieces. Top the lettuce with all your other ingredients, except for the dressing.
3. Once the broth has absorbed to your chicken, finish it off by browning it on both sides. Then place it on top of your salad, and top it with dressing. So yummy!
